GINGERY CHICKEN YELLOW CURRY
Preparation time 10 minutes, cooking time 20 minutes - SERVES 4 PEOPLE
1 Tbsp coconut oil
1 pouch of Curry Love Yellow Thai Curry
2 inch piece of ginger, grated
1 garlic clove, peeled and chopped
8 chicken thighs, skinless, boneless, sliced thinly
1 Tbsp palm or coconut sugar
1 Tbsp lime juice
1. Heat the coconut oil and stir fry the ginger and garlic for a minute until fragrant.
2. Add the chicken and cook over medium heat for 5 to 6 minutes.
3. Add the Yellow Thai Curry and sugar and simmer for 15 minutes or until the chicken is done.
